Crispy Sardines

  • 1 lb sardines cleaned and scaled
  • 1 cup flour
  • 2 cups vegetable oil high-heat oil
  • 1 tbs seasoning choice of savory or spicy
  • 2 tsp kosher salt
  • 1/4 tsp pepper
  • 1 lemon


  • Heat vegetable oil in deep pot ( big enough to fit the on medium-high heat
  • Place Sardines on cooking sheet or plate and pat dry all over
  • Dip the fish in plate of flour and seasoning
  • Mix together the flour and season on a pan or plate, for dusting sardines
  • Turn each sardine into the four mixture. shake off excess and set aside
  • When oil is hot dip one or two sardines slowly into the pot
  • Gentle turn the fish after one minute.
  • Remove when golden brown not dark brown and set on rack or plate lined with paper towel or paper,
  • Cool and squeeze a little lemon all over and season with salt and pepper


Pairs wonderfully with a chardonnay. Other choices are Vermentino, Sauvingnon blanc, Muscat.
