Lobster Amuse Bouche

Shucked Lobster with lobster juices

Ingredients
  

  • 1.5 lb lobster cooked
  • 2 tbsp lobster juice reserved from shucked lobster
  • 1 ounce Lemon juice fresh squeezed

Instructions
 

  • Shuck cooked lobster, reserving the juice as you shuck
  • Cut lobster meat into pieces
  • Arrange in small serving spoons or small dishes
  • Drizzle and divide some of the the lobster juice over the lobster meat
  • Squeeze lemon on each
  • Store in fridge and serve as first tasting

Notes

You can buy chucked meat frozen or fresh from local market from a local fishmonger.
If cooking the lobster yourself, when you shuck the meat, hold it over a bowl to collect all the juice from the claws and tail.
