Salmon BLT with Crispy Skin and Spicy Mayo

Ingredients
  

  • 8 oz Salmon filets skin on
  • 2 tbs spicy mayo combine mayo with chipotle or peri peri sauce
  • 4 pc lettuce leaves
  • 1 tomato sliced
  • 2 burger buns

Instructions
 

  • clean, pat dry and season 8 oz Salmon filets
  • heat grill or stove top pan on medium high heat
  • lay salmon skin side down and crisp for 3 minutes (close grill top if on grill), turn over for 3 more minutes. Remove. Pull off the salmon skin and crisp more in the pan for one minute.
  • 2 burger buns in toaster or on the grill top
  • spread the 2 tbs spicy mayo, tomato slices, 1 pc. salmon, 2 pc. lettuce and then add crispy skin on top. Add more mayo if you want
