Salmon Shepard’s Pie. It’s Seaworthy!
- 1 lb farmed salmon skinless
- 1 cup celery chopped
- 1 cup carrots chopped
- 1 cup onion chopped
- 1/4 cup vegetable broth can use fish broth
- 4 yukon gold potatoes med- large
- 2 tbs butter unsalted
- 3 tbs olive oil
Salmon and vegetables
- Cut fish into cubes and set aside
- Heat a deep pan with oil on medium heat
- Sauté onions, celery, and carrots for another 5-6 minutes
- Add salmon and broth and sauté for another minute turning the salmon
- Transfer to a pyrex of dutch oven deep pot
- Line half the potatoes on the bottom of a pyrex baking dish, or dutch oven pot
- Add all the salmon and vegetables and top with remaining potatoes
- Peel and boil potatoes; drain and then mash with butter
