I love the richness of the salmon, coated in one of my favorite seasonings of chipotle, and then the crunch of the salad… watch out! So sea-licious. They can be made on a plancha on the Q as well. Salmon Skewers on Crunchy Romaine

  • 1 head romaine lettuce cleaned and chopped
  • 1/2 lb salmon even loin portion
  • 1/4 cup pineapple cut into cubes
  • 1/2 cup cherry tomatoes
  • 1/4 cup chipotle powder
  • 2 oz vegetable oil sub with grapeseed or avocado oil
  • 4 8-10 inch wooden skewers


  • Clean, drain and chop romaine lettuce; set aside
  • Cut salmon into cubes enough for three on each skewer
  • Build 4 skewers; one piece each of salmon, tomato, pineapple. Repeat x2
  • Spread the chipotle onto plate big enough for skewers
  • Roll the skewers into the chipotle spice to completely cover; set aside
  • Heat pan on med-high heat with oil
  • Place skewers into pan and cook on each side 2-3 min
  • Toss salad with a favorite dressing and plate up
  • Add the skewers by criss-crossing them on the salad
  • Drizzle with olive oil


Be sure to double up if you have company for this easy, healthy salmon dish.  Alternatively, you can serve it over rice or tofu.
Pairs well with a Sauvignon Blanc, a light Pinot Noir, or try a Pinotage!
