Salmon Skewers on Crunchy Romaine
- 1 head romaine lettuce cleaned and chopped
- 1/2 lb salmon even loin portion
- 1/4 cup pineapple cut into cubes
- 1/2 cup cherry tomatoes
- 1/4 cup chipotle powder
- 2 oz vegetable oil sub with grapeseed or avocado oil
- 4 8-10 inch wooden skewers
- Clean, drain and chop romaine lettuce; set aside
- Cut salmon into cubes enough for three on each skewer
- Build 4 skewers; one piece each of salmon, tomato, pineapple. Repeat x2
- Spread the chipotle onto plate big enough for skewers
- Roll the skewers into the chipotle spice to completely cover; set aside
- Heat pan on med-high heat with oil
- Place skewers into pan and cook on each side 2-3 min
- Toss salad with a favorite dressing and plate up
- Add the skewers by criss-crossing them on the salad
- Drizzle with olive oil
