Skate Fritters; Makes You Want to Dip-A-Dee-Doo-Dah!
- 1 lb skate
- 1/2 cup breadcrumbs season with s & p and herbs
- 2 tbs vegetable oil
- 1/2 cup lite mayo
- 1 tbs chipotle power or paprika
- 1 lemon
- Clean and wipe the skate and layout flat on surface
- Cut out small medallions in the fish; use cookie cutter or cut roughly and place into plate of breadcrumbs
- Coat fish on both sides and all over with the crumbs
- Heat oil in pan to medium heat
- Cook fish on both sides 3-4 minutes each
- Place on plate
- Mix the mayo and spice ( chipotle or hot sauce) and let sit for 15-minutes
- Season the fish with salt & pepper and squeeze lemon all over
